Ingredients
For the crust:
- 1 1/2 cups almond flour
 - 1/4 cup powdered erythritol
 - 1/4 cup unsalted butter, melted
 - 1/2 teaspoon cinnamon (optional)
 
For the filling:
- 24 oz cream cheese, softened
 - 3/4 cup powdered erythritol
 - 3 large eggs
 - 1 teaspoon vanilla extract
 - 1/4 cup sour cream
 - 2 tablespoons heavy cream
 
Instructions
- Preheat the oven: Preheat the oven to 325°F (160°C) and line the bottom of a 9-inch springform pan with parchment paper.
 - Prepare the crust: Mix almond flour, powdered erythritol, melted butter, and cinnamon. Press into the pan and bake for 10 minutes.
 - Make the filling: Beat cream cheese and erythritol, add eggs one at a time, then mix in vanilla, sour cream, and heavy cream.
 - Bake: Pour the filling over the crust and bake for 45–55 minutes. Let cool in the oven, then refrigerate for at least 4 hours.
 - Serve: Remove from the pan and serve chilled.
