Description

Keto Cauliflower Spanish Rice is a flavorful, low-carb alternative to traditional Spanish rice, made with cauliflower rice and seasoned with tomato, chili powder, and cumin. This quick and easy skillet dish is perfect for those following a keto diet or anyone looking for a healthy side dish without sacrificing bold taste.

Ingredients

Ingredients

  • 1 tablespoon Olive oil
  • 3 ounces Onion, diced
  • 1 clove Garlic, finely minced
  • 10 ounces Rotel (diced tomatoes and green chilies)
  • 1 tablespoon Tomato paste
  • 1 teaspoon Chili powder
  • ½ teaspoon Cumin
  • ½ teaspoon Salt
  • 12 ounces Cauliflower rice

Instructions

  1. Heat the oil: Heat olive oil in a large skillet over medium-high heat to prepare for sautéing the vegetables.
  2. Sauté onion and garlic: Add diced onion to the skillet and cook for 3 minutes until it begins to soften. Then add the minced garlic and continue cooking for another 2 minutes until the onion becomes translucent and fragrant.
  3. Add seasonings and tomatoes: Pour in the Rotel along with tomato paste, chili powder, cumin, and salt. Stir thoroughly to combine all the flavors evenly in the skillet.
  4. Cook cauliflower rice: Add the cauliflower rice to the skillet and stir well to mix it with the seasonings and tomato mixture. Cook for 3-5 minutes, stirring occasionally, until the cauliflower rice is tender but not mushy.
  5. Serve: Remove from heat and serve immediately as a delicious keto-friendly side or base for your favorite protein.
