Ingredients
Chicken
- 1 whole chicken (4-5 pounds)
Seasoning & Herbs
- 2 tablespoons extra virgin olive oil
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 4 whole garlic cloves
- 1 lemon, halved
- 1 tablespoon salt
- 1 teaspoon black pepper
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the chicken.
- Prepare Chicken: Rinse the whole chicken under cool water and pat dry thoroughly with paper towels to ensure crisp skin.
- Season Chicken: Rub extra virgin olive oil all over the chicken, ensuring even coating. Season generously with salt and pepper both inside and outside the chicken for full flavor.
- Stuff the Cavity: Place the garlic cloves, lemon halves, rosemary, and thyme sprigs inside the chicken’s cavity to infuse aromatic flavors during roasting.
- Roast: Position the chicken breast-side up in a roasting pan. Roast in the preheated oven for 1 hour to 1 hour and 15 minutes, until the skin is golden brown and the internal temperature reaches at least 165°F (74°C).
- Rest and Serve: Remove the chicken from the oven and let it rest for at least 10 minutes before carving. Drizzle with pan drippings if desired to enhance moisture and flavor.
Notes
- Ensure the internal temperature reaches 165°F (74°C) for food safety.
- Resting the chicken before carving allows juices to redistribute for moist meat.
- You can also add other herbs or spices to suit your taste preferences.
- Save pan drippings to make a flavorful gravy if desired.
