Description

A classic roast chicken recipe featuring a whole chicken seasoned with fresh herbs, garlic, lemon, and olive oil, then oven-roasted to golden perfection. This simple yet flavorful dish serves as a perfect centerpiece for any meal.

Ingredients

Chicken

  • 1 whole chicken (4-5 pounds)

Seasoning & Herbs

  • 2 tablespoons extra virgin olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 4 whole garlic cloves
  • 1 lemon, halved
  • 1 tablespoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the chicken.
  2. Prepare Chicken: Rinse the whole chicken under cool water and pat dry thoroughly with paper towels to ensure crisp skin.
  3. Season Chicken: Rub extra virgin olive oil all over the chicken, ensuring even coating. Season generously with salt and pepper both inside and outside the chicken for full flavor.
  4. Stuff the Cavity: Place the garlic cloves, lemon halves, rosemary, and thyme sprigs inside the chicken’s cavity to infuse aromatic flavors during roasting.
  5. Roast: Position the chicken breast-side up in a roasting pan. Roast in the preheated oven for 1 hour to 1 hour and 15 minutes, until the skin is golden brown and the internal temperature reaches at least 165°F (74°C).
  6. Rest and Serve: Remove the chicken from the oven and let it rest for at least 10 minutes before carving. Drizzle with pan drippings if desired to enhance moisture and flavor.

Notes

  • Ensure the internal temperature reaches 165°F (74°C) for food safety.
  • Resting the chicken before carving allows juices to redistribute for moist meat.
  • You can also add other herbs or spices to suit your taste preferences.
  • Save pan drippings to make a flavorful gravy if desired.
