Description

John Wayne Casserole is a hearty and flavorful dish featuring layers of taco-seasoned beef, creamy sour cream mixture, and a medley of vegetables, all topped with melted cheddar cheese. Baked to perfection with a biscuit crust, this casserole is a crowd-pleaser that’s easy to make and packed with Tex-Mex flavors.


Ingredients

For the Taco Meat:

  • 1 pound ground beef
  • 1 packet taco seasoning
  • ¾ cup water

For the Casserole:

  • 1 (16.3 oz) can refrigerated biscuit dough
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 cup shredded cheddar cheese (divided)
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 1 (4 oz) can diced green chiles
  • 2 tomatoes, chopped
  • Salt and pepper to taste
  • Nonstick cooking spray


Instructions

  1. Preheat the oven and prepare the baking dish: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with nonstick spray.
  2. Cook the taco meat: In a skillet, cook the ground beef until browned, drain excess fat, then add taco seasoning and water. Simmer until thickened, about 5 minutes. Remove from heat.
  3. Prepare the crust: Press the biscuit dough into the baking dish to form a crust. Bake for 10 minutes.
  4. Layer the casserole: Mix sour cream, mayonnaise, half of the cheddar, and onion. Spread over the crust. Add taco meat, bell pepper, green chiles, tomatoes, and remaining cheddar. Bake for 25–30 minutes.
  5. Finish and serve: Let the casserole sit for 5 minutes before slicing. Serve hot.

Notes

  • You can substitute ground turkey or plant-based meat for beef.
  • Add jalapeños for extra heat.
  • Serve with salsa or guacamole on the side.
