Description

This Jiffy Cornbread Taco Bake is a quick and delicious one-pan meal combining seasoned ground beef, tangy salsa, melted cheddar cheese, and a golden cornbread topping. Perfect for a family dinner, it delivers classic taco flavors in a comforting baked casserole.

Ingredients

Base

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese

Cornbread Topping

  • 1 box Jiffy cornbread mix
  • 1/3 cup milk
  • 1 large egg

Optional Toppings

  • Sour cream
  • Chopped cilantro
  • Diced tomatoes
  • Jalapeños

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C) and grease an 8×8-inch baking dish to prepare it for baking.
  2. Cook beef: In a skillet over medium heat, cook the ground beef until browned, then drain any excess fat to keep the dish from being greasy.
  3. Season: Add the taco seasoning and water to the browned beef in the skillet. Let it simmer for about 5 minutes until the mixture thickens and flavors meld.
  4. Assemble base: Spread the seasoned beef evenly into the prepared baking dish. Spoon the salsa over the beef and sprinkle the shredded cheddar cheese on top.
  5. Prepare cornbread: In a separate bowl, combine the Jiffy cornbread mix, milk, and egg. Stir gently until just combined to form the batter.
  6. Top and bake: Pour the cornbread batter evenly over the beef mixture in the baking dish. Gently spread to cover. Bake in the preheated oven for 20–25 minutes, or until the cornbread is golden brown and cooked through.
  7. Serve: Allow the bake to cool slightly before slicing. Serve with optional toppings like sour cream, chopped cilantro, diced tomatoes, and jalapeños for extra flavor.

Notes

  • Drain excess fat after cooking the ground beef to prevent a greasy bake.
  • Do not overmix the cornbread batter to keep it light and fluffy.
  • Feel free to customize the toppings based on your preference or dietary needs.
  • Make sure the cornbread topping is fully cooked by checking for a golden brown color and a toothpick inserted coming out clean.
  • This dish reheats well and can be served for meal prep lunches or dinners.
