Ingredients
Onions:
- 4 large onions, peeled and tops cut off (about 1 inch)
Rice Mixture:
- 1 cup basmati or jasmine rice, uncooked
- 2 cups chicken broth (or vegetable broth for a vegetarian version)
- 1/2 cup dried cranberries or raisins
- 1/2 cup chopped toasted almonds (or pistachios)
- 1/4 cup chopped fresh parsley
- 1 tsp ground cinnamon
- 1/2 tsp ground cumin
- 1/2 tsp ground turmeric
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 tbsp butter (optional for extra flavor)
- 1/2 cup pomegranate seeds (optional, for garnish)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Prepare the onions: Slice a thin layer off the bottom of each onion, hollow out the center carefully, and set aside the flesh.
