Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper or wax paper and set it aside to use for dropping the candy mixture later.
- Cook Syrup: In a medium saucepan over medium heat, combine the sugar, corn syrup, and water. Stir until the sugar dissolves, then stop stirring and allow the mixture to boil undisturbed until it reaches 250°F, known as the hard-ball stage, as measured with a candy thermometer.
- Whip Egg Whites: While the syrup cooks, use a stand mixer with the whisk attachment to beat the egg whites and salt on high speed until stiff peaks form.
- Combine Syrup with Egg Whites: Once the syrup reaches 250°F, carefully pour it in a thin stream into the whipped egg whites while the mixer runs at medium-high speed to incorporate the hot syrup safely and evenly.
- Add Gelatin and Vanilla: Immediately add the dry flavored gelatin and vanilla extract into the mixture, then continue beating for 5 to 7 minutes until the mixture becomes thick, glossy, and holds its shape firmly.
- Fold in Nuts: Quickly fold in the chopped nuts if using, giving the candy a crunchy texture.
- Form Candy Pieces: Using two spoons or a cookie scoop, drop rounded spoonfuls of the mixture onto the prepared baking sheet in individual portions.
- Let Candy Set: Allow the candies to sit at room temperature for several hours or overnight until they become firm and dry to the touch, perfect for serving and storing.
