Description

Ingredients

For the marinade:

  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme

For the chicken:

  • 4 boneless, skinless chicken breasts
  • 2 ripe peaches, pitted and sliced
  • 1 jalapeño, thinly sliced (seeds removed for less heat)

Instructions

  1. Prepare the marinade: In a small bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, garlic powder, salt, pepper, and thyme.
  2. Marinate the chicken: Place the chicken breasts in a shallow dish or zip-top bag and pour half of the marinade over the chicken. Reserve the remaining marinade for later. Let the chicken marinate for at least 30 minutes (or up to 4 hours).
  3. Cook the chicken: Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and grill or sear for 5–6 minutes per side, or until cooked through and internal temperature reaches 165°F.
  4. Prepare the peaches and jalapeños: While the chicken cooks, place sliced peaches and jalapeños in a bowl and toss with a drizzle of olive oil. Grill or sauté them for 2–3 minutes until slightly softened and charred.
  5. Assemble and serve: Brush the reserved marinade over the cooked chicken and top with the warm peaches and jalapeños. Serve hot.

Notes

  • For extra flavor, add a splash of bourbon or hot sauce to the marinade.
