Ingredients
Filling
- 2 cups cooked shredded chicken
- ½ cup cream cheese, softened
- ¼ cup buffalo wing sauce (more or less to taste)
- 1 jalapeño, finely chopped (seeds removed for less heat)
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella or Monterey Jack cheese
- ½ teaspoon garlic powder
Assembly
- 8–10 small flour tortillas
- Cooking spray or oil for baking
Instructions
- Preheat: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Mix Filling: In a large bowl, combine the cream cheese, buffalo wing sauce, chopped jalapeño, garlic powder, shredded cheddar, and shredded mozzarella until you get a smooth, evenly mixed filling.
- Add Chicken: Fold the cooked shredded chicken into the cream cheese mixture until all the chicken is fully coated and the mixture is uniform.
- Assemble Taquitos: Spoon about 2–3 tablespoons of the filling onto each small flour tortilla. Roll each tortilla tightly around the filling and place them seam-side down on the prepared baking sheet to keep them closed during baking.
- Prepare for Baking: Lightly spray the tops of the rolled taquitos with cooking spray or brush them with a little oil; this helps them crisp up nicely in the oven.
- Bake: Bake in the preheated oven for 15–18 minutes or until the taquitos are golden brown and crispy. Remove from oven and let cool slightly before serving.
