Ingredients

For the Casserole:

  • 3 cups cooked shredded chicken breast
  • 1 cup cooked rice (white or cauliflower rice)
  • 1/2 cup buffalo wing sauce
  • 4 oz cream cheese (softened)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped pickled jalapeños
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or oil for greasing


Instructions

  1. Preheat Oven: Preheat the oven to 375°F and grease a 9×9-inch baking dish.
  2. Mix Ingredients: In a large bowl, combine the shredded chicken, cooked rice, buffalo sauce, cream cheese, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Add Cheeses and Peppers: Stir in half of the cheddar and mozzarella cheeses and the chopped jalapeños.
  4. Bake: Transfer the mixture to the baking dish, sprinkle remaining cheese on top, and bake for 20–25 minutes until hot and bubbly.
