Ingredients
For the Casserole:
- 3 cups cooked shredded chicken breast
- 1 cup cooked rice (white or cauliflower rice)
- 1/2 cup buffalo wing sauce
- 4 oz cream cheese (softened)
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped pickled jalapeños
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat Oven: Preheat the oven to 375°F and grease a 9×9-inch baking dish.
- Mix Ingredients: In a large bowl, combine the shredded chicken, cooked rice, buffalo sauce, cream cheese, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix well.
- Add Cheeses and Peppers: Stir in half of the cheddar and mozzarella cheeses and the chopped jalapeños.
- Bake: Transfer the mixture to the baking dish, sprinkle remaining cheese on top, and bake for 20–25 minutes until hot and bubbly.
- Serve: Let it sit for 5 minutes, then top with green onions before serving warm.
