Ingredients

Meat and Pasta

  • 1 pound Italian sausage, removed from casings (sweet or hot)
  • 1 pound Bow Tie Pasta (Farfalle)

Vegetables and Aromatics

  • 1 medium Onion, chopped
  • 4 cloves Garlic, minced
  • 1 medium Red Bell Pepper, chopped
  • 1 medium Yellow Bell Pepper, chopped

Liquids and Sauces

  • 2 tablespoons Olive Oil, extra virgin
  • 28 ounces Canned Crushed Tomatoes
  • 2 tablespoons Tomato Paste
  • 1/2 cup Chicken Broth
  • 1/2 cup Heavy Cream

Herbs, Spices, and Cheese

  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1/2 teaspoon Red Pepper Flakes (or more to taste)
  • Salt and Black Pepper to taste
  • 1/2 cup Parmesan Cheese, grated, plus more for serving
  • 1/4 cup Fresh Parsley, chopped, for garnish

Instructions

  1. Brown the Sausage: In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the Italian sausage, breaking it up with a spoon as it cooks. Cook until browned and cooked through, about 8-10 minutes. Remove and set aside.
  2. Sauté the Aromatics: Leave any rendered fat in the skillet. Add the chopped onion and cook until softened and translucent, about 5 minutes.
  3. Add Garlic and Bell Peppers: Add minced garlic and chopped red and yellow bell peppers. Cook 3-5 minutes until peppers soften and garlic is fragrant.
  4. Build the Tomato Base: Stir in crushed tomatoes and tomato paste, mixing well with the vegetables.
  5. Add Herbs and Spices: Add dried oregano, basil, and red pepper flakes. Season with salt and black pepper to taste.
  6. Simmer the Sauce: Bring sauce to simmer, reduce heat to low, cover and simmer for 15-30 minutes, stirring occasionally.
  7. Add Chicken Broth and Cream: Stir in chicken broth and heavy cream to enrich the sauce.
  8. Incorporate the Sausage: Return the cooked sausage to the skillet and mix it evenly into the sauce.
  9. Add Parmesan Cheese: Stir in grated Parmesan cheese until melted and combined.
  10. Taste and Adjust: Taste the sauce and adjust seasoning as necessary.
  11. Boil the Pasta: While sauce simmers, bring a large pot of salted water to a boil. Cook bow tie pasta according to package instructions until al dente.
  12. Reserve Pasta Water: Before draining, reserve about 1 cup of pasta cooking water.
  13. Drain the Pasta: Drain the pasta in a colander.
  14. Combine Pasta and Sauce: Add drained pasta to the skillet with the sauce and sausage. Toss to coat well.
  15. Adjust Consistency: If sauce is too thick, add reserved pasta water one tablespoon at a time until desired consistency is reached.
  16. Serve Immediately: Serve the Italian sausage bow tie pasta hot.
  17. Garnish: Garnish each serving with fresh chopped parsley and additional grated Parmesan cheese.

Notes

  • You can use either sweet or hot Italian sausage depending on your spice preference.
  • Reserving pasta water helps adjust the sauce consistency perfectly.
  • Simmering the sauce for at least 15 minutes allows the flavors to meld beautifully.
  • Use freshly grated Parmesan cheese for the best flavor and melt.
  • This dish pairs well with a simple green salad and crusty bread for a full meal.
