Description

Italian Pastina Soup is a cozy, comforting dish made with tiny pasta (pastina), vegetables, and a light, flavorful broth. This simple and wholesome soup is perfect for any time you need a warm bowl of goodness. Ideal for chilly days or when you’re feeling under the weather!


Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 1 small carrot, peeled and chopped

  • 1 celery stalk, chopped

  • 2 garlic cloves, minced

  • 4 cups chicken broth (or vegetable broth for a vegetarian version)

  • 1 cup pastina (tiny pasta)

  • 1/2 teaspoon dried oregano

  • Salt and pepper, to taste

  • Fresh parsley, chopped (optional for garnish)

 

  • Grated Parmesan cheese (optional for garnish)


Instructions

  • Heat the olive oil in a large pot over medium heat. Add the onion, carrot, and celery. Sauté for about 5 minutes, or until the vegetables are softened.

  • Add the garlic and cook for another 1 minute until fragrant.

  • Pour in the chicken broth, and bring the mixture to a boil.

  • Add the pastina and oregano. Reduce heat and let the soup simmer for 8-10 minutes, or until the pastina is tender.

  • Season with salt and pepper to taste.

  • Ladle the soup into bowls and garnish with fresh parsley and grated Parmesan cheese, if desired.

 

  • Serve hot and enjoy!


Notes

  • For a heartier version, you can add cooked chicken, or use a mix of vegetables like zucchini or spinach.

  • If you prefer a thicker soup, use less broth or add a bit of tomato paste.

 

  • Pastina tends to absorb the broth as it sits, so you may need to add extra broth when reheating.
