Description

A quick and flavorful Italian Basil Chicken recipe featuring juicy seared chicken breasts simmered with garlic, cherry tomatoes, fresh basil, and a touch of balsamic vinegar. This dish is simple to prepare in one skillet, perfect for a delicious weeknight dinner with a fresh, aromatic taste.

Ingredients

Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Sauce and Flavorings

  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1/4 cup shredded Parmesan cheese (optional)

Instructions

  1. Heat the skillet: Heat olive oil in a large skillet over medium heat to prepare for cooking the chicken.
  2. Season the chicken: Season the chicken breasts evenly with salt, black pepper, and dried oregano to enhance the flavor.
  3. Cook the chicken: Place the chicken breasts in the skillet and cook for 5-6 minutes on each side until they turn golden brown and are fully cooked through. Remove the chicken from the skillet and set aside.
  4. Sauté garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  5. Cook tomatoes and spices: Add the halved cherry tomatoes and red pepper flakes (if using), cooking for 3-4 minutes until the tomatoes soften and release their juices.
  6. Add basil and balsamic: Stir in the balsamic vinegar and fresh chopped basil, cooking for another minute to meld the flavors together.
  7. Combine chicken and sauce: Return the cooked chicken breasts to the skillet, spooning the tomato and basil mixture over the top to coat and warm through.
  8. Add cheese: Sprinkle the shredded Parmesan cheese over the chicken and allow it to melt slightly before serving.
  9. Serve: Serve the Italian Basil Chicken warm alongside pasta, rice, or a fresh salad for a complete meal.

Notes

  • Use skinless chicken breasts to keep the dish light and reduce cooking time.
  • Adjust red pepper flakes according to your preferred spice level or omit for a milder dish.
  • For extra flavor, let the chicken rest for a few minutes after cooking to retain juices.
  • Fresh basil is recommended for best flavor, but dried can be used in a pinch.
  • Parmesan cheese is optional but adds a savory finish to the recipe.
