6 pounds apples (such as Fuji, Gala, or McIntosh), peeled, cored, and chopped,
Apple Cider or Apple Juice:

Granulated Sugar:

Brown Sugar:

1 tablespoon,
Ground Cloves:
½ teaspoon,
Ground Nutmeg:
½ teaspoon,

Instructions
- Prepare the Apples: Place the chopped apples and apple cider in a large slow cooker.
- Cook the Apples: Cook on high for 4–5 hours or low for 8–10 hours until very soft.
- Puree the Apples: Use an immersion blender or transfer to a blender to puree until smooth.
- Add Ingredients: Mix in sugars, spices, salt, and lemon juice.
- Cook Further: Continue cooking uncovered for 1–2 hours until thick.
- Finish: Stir in vanilla extract if desired, cool, then store in jars.
