Description

These Irresistible Coconut Pineapple Bites are a tropical and sweet no-bake snack that combines dried pineapple, shredded coconut, and nuts for a healthy energy boost. Perfect as a refreshing treat or dessert, they are vegan, gluten-free, and dairy-free, making them suitable for various dietary preferences.

Ingredients

Dry Ingredients

  • 1 cup dried pineapple (unsweetened or sweetened, chopped)
  • ½ cup unsweetened shredded coconut (plus extra for rolling)
  • ½ cup raw cashews or almonds
  • Pinch of salt

Wet Ingredients

  • 1 tablespoon maple syrup or honey
  • 1 tablespoon coconut oil
  • ½ teaspoon vanilla extract

Instructions

  1. Prepare the Mixture: In a food processor, combine chopped dried pineapple, shredded coconut, nuts (cashews or almonds), maple syrup or honey, coconut oil, vanilla extract, and a pinch of salt. Blend until the mixture becomes sticky and well combined, with small, visible bits of pineapple and nuts for texture.
  2. Adjust Consistency: If the mixture feels too dry or crumbly, add a tiny bit more coconut oil or a splash of warm water to help it bind together more easily.
  3. Form the Bites: Scoop out heaping teaspoons of the mixture and roll them between your palms into bite-sized balls for easy snacking.
  4. Coat with Coconut: Roll each ball in extra shredded coconut to coat the exterior, adding texture and extra flavor.
  5. Chill to Firm Up: Place the coconut-coated bites on a parchment-lined tray and refrigerate them for at least 30 minutes to help them firm up properly.
  6. Store Properly: Once chilled, store the bites in an airtight container in the refrigerator for up to 1 week to maintain freshness.

Notes

  • For extra zing, add a teaspoon of lime zest or a squeeze of lime juice to the mixture before blending.
  • These bites freeze well for longer storage; thaw before serving.
  • Great as a snack, lunchbox treat, or healthy dessert option.
