Ingredients
Wet Ingredients
- 2/3 cup butter (Kerrygold unsalted for richer flavor), melted
- 1 cup brown sugar
- 1/3 cup sugar
- 1 large egg, at room temperature (about 70°F)
- 1 1/2 tsp vanilla extract
- 2 1/2 tsp red food coloring
Dry Ingredients
- 4 tbsp cocoa powder (Hershey’s Special Dark)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp espresso powder
- 1 tsp cornstarch
- 1 1/3 cup all-purpose flour
Add-ins
- 2/3 cup white chocolate chips (Ghirardelli recommended for creaminess)
- 1/3 cup mini semi-sweet chocolate chips
Instructions
- Prepare the Dough: In a mixing bowl, cream together the melted butter, brown sugar, and sugar until smooth. Beat in the egg, vanilla extract, and red food coloring until fully combined.
- Combine Dry Ingredients: In a separate bowl, whisk together cocoa powder, baking soda, salt, espresso powder, cornstarch, and all-purpose flour.
- Mix Dry with Wet: Gradually add the dry ingredients to the wet mixture, stirring until just combined to form a soft dough. Fold in both white and mini semi-sweet chocolate chips evenly throughout the dough.
- Preheat Air Fryer: Set your air fryer to 350°F (175°C) and allow it to preheat for about 3 minutes to ensure even cooking.
- Shape Cookies: Scoop about 2 tablespoons of dough and gently roll into balls. Place the dough balls spaced adequately on a piece of parchment paper or a silicone mat that fits inside the air fryer basket to prevent sticking and allow air circulation.
- Air Fry the Cookies: Air fry the cookies at 350°F (175°C) for approximately 5 minutes, checking for a soft but set center. Depending on your air fryer size, bake in batches to avoid overcrowding.
- Cool and Serve: Remove cookies carefully and let them cool on a wire rack to finish setting before serving. Enjoy warm or at room temperature for best texture.
Notes
- Ensure the butter is melted and cooled slightly before mixing to avoid cooking the egg prematurely.
- Use room temperature egg for better incorporation and cookie texture.
- Adjust air fryer time slightly depending on cookie size and air fryer model for perfect doneness.
- Using parchment paper or silicone liner is recommended to prevent sticking in the air fryer basket.
- For more intense red color, increase food coloring slightly but avoid overuse to prevent taste changes.
