Description

Irish Potato Candy is a delightful no-bake treat that resembles tiny potatoes but is actually a sweet and creamy coconut confection. These bite-sized candies are perfect for celebrating St. Patrick’s Day or satisfying your sweet tooth.


Ingredients

Candy:

  • 1/4 cup unsalted butter, softened
  • 4 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 cups powdered sugar
  • 2 1/2 cups sweetened shredded coconut

Coating:

  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. Cream Butter and Cream Cheese: In a large bowl, cream together the butter and cream cheese until smooth and fluffy.
  2. Add Flavorings: Mix in the vanilla extract and salt until well combined.
  3. Incorporate Powdered Sugar: Gradually beat in the powdered sugar, one cup at a time, until fully mixed.
  4. Add Coconut: Stir in the shredded coconut by hand until a thick, cohesive mixture forms.
  5. Shape Candies: Roll the mixture into small oval or potato-shaped balls, about 1 inch in size.
  6. Coat in Cinnamon: Roll each candy in ground cinnamon to coat.
  7. Chill and Serve: Place candies on a lined baking sheet, refrigerate for at least 1 hour before serving.

Notes

  • Despite the name, Irish potato candy contains no actual potatoes. It’s a sweet and creamy coconut confection popular around St. Patrick’s Day.
