- 1 cup salsa verde (jarred or homemade)
- 1/4 cup chicken broth or water
- Juice of 1 lime
- Chopped fresh cilantro for garnish (optional)
Instructions
- Season the Chicken: Place the chicken breasts or thighs in the Instant Pot. Sprinkle evenly with garlic powder, onion powder, ground cumin, salt, and black pepper to season thoroughly.
- Add Sauce Ingredients: Pour the salsa verde over the chicken along with the chicken broth or water. Squeeze the juice of one lime directly into the pot for a bright, tangy flavor.
- Pressure Cook: Secure the Instant Pot lid and set the valve to sealing. Program it to cook on high pressure for 12 minutes.
- Release Pressure: After cooking, allow the pressure to release naturally for 5 minutes to keep the chicken tender, then carefully perform a quick release to let out any remaining pressure.
- Shred the Chicken: Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir it well to coat with the salsa verde sauce.
