Ingredients

Chicken and Seasonings

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sauce and Garnish

  • 1 cup salsa verde (jarred or homemade)
  • 1/4 cup chicken broth or water
  • Juice of 1 lime
  • Chopped fresh cilantro for garnish (optional)


Instructions

  1. Season the Chicken: Place the chicken breasts or thighs in the Instant Pot. Sprinkle evenly with garlic powder, onion powder, ground cumin, salt, and black pepper to season thoroughly.
  2. Add Sauce Ingredients: Pour the salsa verde over the chicken along with the chicken broth or water. Squeeze the juice of one lime directly into the pot for a bright, tangy flavor.
  3. Pressure Cook: Secure the Instant Pot lid and set the valve to sealing. Program it to cook on high pressure for 12 minutes.
  4. Release Pressure: After cooking, allow the pressure to release naturally for 5 minutes to keep the chicken tender, then carefully perform a quick release to let out any remaining pressure.
  5. Shred the Chicken: Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir it well to coat with the salsa verde sauce.
  6. Serve: Serve the shredded salsa verde chicken warm. It’s delicious over rice, in tacos or burritos, or added to salads. Garnish with chopped fresh cilantro if desired.
