Ingredients

For the Butter Chicken:

  • 1½ lbs boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon butter (for sautéing)
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh grated ginger
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • ¼ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1 can (15 oz) tomato sauce
  • ½ cup heavy cream
  • 2 tablespoons butter (for finishing)
  • 2 tablespoons chopped cilantro (for garnish)
  • cooked basmati rice or naan for serving


Instructions

  1. Sauté Aromatics: Set the Instant Pot to Sauté mode and add 1 tablespoon butter and oil. Sauté onion until softened, then add garlic and ginger.
  2. Add Spices and Chicken: Stir in garam masala, cumin, paprika, turmeric, cayenne, and salt. Add chicken and tomato sauce, coat well.
  3. Pressure Cook: Close lid, set to High Pressure for 10 minutes. Natural release for 5 minutes, then quick release.
  4. Finish: Switch to Sauté mode, add cream and butter. Simmer until slightly thickened.
  5. Serve: Garnish with cilantro and serve over rice or with naan.

Notes

  • You can use chicken breast instead of thighs for a leaner option.
  • For a dairy-free version, use coconut milk and vegan butter.
