Ingredients
For the Butter Chicken:
- 1½ lbs boneless skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon butter (for sautéing)
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh grated ginger
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon turmeric
- ¼ teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1 can (15 oz) tomato sauce
- ½ cup heavy cream
- 2 tablespoons butter (for finishing)
- 2 tablespoons chopped cilantro (for garnish)
- cooked basmati rice or naan for serving
Instructions
- Sauté Aromatics: Set the Instant Pot to Sauté mode and add 1 tablespoon butter and oil. Sauté onion until softened, then add garlic and ginger.
- Add Spices and Chicken: Stir in garam masala, cumin, paprika, turmeric, cayenne, and salt. Add chicken and tomato sauce, coat well.
- Pressure Cook: Close lid, set to High Pressure for 10 minutes. Natural release for 5 minutes, then quick release.
- Finish: Switch to Sauté mode, add cream and butter. Simmer until slightly thickened.
- Serve: Garnish with cilantro and serve over rice or with naan.
Notes
- You can use chicken breast instead of thighs for a leaner option.
- For a dairy-free version, use coconut milk and vegan butter.
