Description

This Instant Pot Bone-In Chicken Thighs with Peri Peri Sauce recipe is a flavorful and easy-to-make dish that combines tender chicken infused with a zesty, spicy peri peri sauce. Perfect for a quick weeknight meal, the chicken is pressure-cooked to juicy perfection, then simmered in a vibrant sauce made from citrus juices, garlic, and spices, delivering a deliciously tangy and mildly spicy flavor profile.

Ingredients

Chicken and Seasoning

  • 1 pound chicken thighs, bone-in and skinless
  • 1 teaspoon all-purpose seasoning

Peri Peri Sauce

  • 1/2 cup chicken broth
  • 1 lemon, zested and juiced
  • 1 orange, juiced
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the Chicken: Pat the chicken thighs dry using paper towels, then season both sides evenly with the all-purpose seasoning. This step ensures the chicken is well-flavored throughout.
  2. Arrange Chicken in Instant Pot: Place the seasoned chicken thighs at the bottom of the Instant Pot. Try to arrange them in a single layer if possible to promote even cooking.
  3. Prepare the Peri Peri Sauce: In a mixing bowl, whisk together chicken broth, lemon juice and zest, orange juice, olive oil, minced garlic, paprika, dried oregano, and crushed red pepper flakes until fully combined. Then, pour this sauce mixture evenly over the chicken in the Instant Pot.
  4. Pressure Cook: Secure the Instant Pot lid and set the valve to sealing. Cook the chicken on the manual/high pressure setting for 13 minutes to allow the peri peri flavors to infuse the meat.
  5. Release Pressure: Allow the Instant Pot to naturally release pressure for 5 minutes, then carefully perform a quick release for any remaining pressure before opening the lid.
  6. Simmer the Sauce: Remove the cooked chicken and set aside. Switch the Instant Pot to the ‘sauté’ function and let the sauce simmer for about 5 minutes, stirring occasionally, to concentrate and thicken the flavors.
  7. Serve: Place the chicken on a serving platter, drizzle the reduced peri peri sauce over the top, and garnish with chopped fresh parsley. Serve hot for the best taste experience.

Notes

  • You can use bone-in skin-on thighs if you prefer; cooking time may vary slightly.
  • If you want a spicier dish, increase the amount of crushed red pepper flakes or add a chopped fresh chili to the sauce.
  • This peri peri sauce pairs well with rice, roasted vegetables, or a fresh salad.
  • Leftovers can be refrigerated for up to 3 days and reheated gently to keep the chicken moist.
