Marinade

- ½ cup ketchup
- ½ cup pineapple juice

- 3 garlic cloves, minced
- 1 tablespoon sesame oil
- ½ teaspoon black pepper

Instructions
- Prepare the marinade: In a large bowl, whisk together soy sauce, ketchup, pineapple juice, brown sugar, rice vinegar, grated fresh ginger, minced garlic, sesame oil, and black pepper until well combined to create the marinade.
- Marinate the chicken: Reserve ½ cup of the marinade for basting later and set aside. Add the chicken thighs into the remaining marinade, making sure they are fully submerged. Cover the bowl and refrigerate for at least 2 hours or preferably overnight to deeply infuse the flavors.
