Ingredients
For the Chicken:
- 1 1/2 pounds boneless, skinless chicken thighs or breasts (cut into sandwich-sized portions)
- 1 cup buttermilk
- 1 teaspoon hot sauce (plus more to taste)
For the Breading:
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For Serving:
- Vegetable oil for frying
- 8 buttermilk biscuits (homemade or store-bought)
- 1/3 cup honey
- 1–2 tablespoons hot sauce (for honey glaze)
- 1 tablespoon butter (optional)
Instructions
- Marinate the Chicken: In a medium bowl, whisk together buttermilk and 1 teaspoon hot sauce. Marinate chicken pieces in the mixture for at least 30 minutes.
- Prepare the Breading: Combine flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper in a bowl.
- Bread the Chicken: Dredge marinated chicken in the seasoned flour mixture.
- Fry the Chicken: Fry breaded chicken in hot oil until golden brown and cooked through.
- Make the Hot Honey Glaze: Warm honey, hot sauce, and butter in a saucepan.
- Assemble the Sandwiches: Place fried chicken in biscuits, drizzle with hot honey glaze, and serve.
