Ingredients
Bread and Avocado
- 4 slices sourdough bread, toasted
- 1 large ripe avocado, peeled and mashed
- Juice of 1/2 lemon
- Salt and pepper to taste
Halloumi and Toppings
- 6 oz halloumi cheese, sliced into 1/4-inch thick pieces
- 1 tablespoon olive oil
- 2 tablespoons honey
- 1/2–1 teaspoon hot sauce (adjust to taste)
- Crushed red pepper flakes for garnish (optional)
- Fresh thyme or microgreens for topping (optional)
Instructions
- Prepare the avocado: In a small bowl, mash the avocado with lemon juice, salt, and pepper until smooth but still slightly chunky to maintain texture.
- Cook the halloumi: Heat olive oil in a non-stick skillet over medium heat and cook the halloumi slices for 2–3 minutes per side until golden brown and crispy on the outside while soft inside.
- Make the hot honey drizzle: In a separate bowl, mix the honey with hot sauce to create a spicy-sweet drizzle; adjust the amount of hot sauce depending on your heat preference.
- Prepare the toast base: Toast the sourdough slices until golden and crispy. Optionally, rub the warm toast with a garlic clove for extra flavor.
- Assemble the toast: Spread the mashed avocado evenly over each toasted slice, then layer with the warm, crispy halloumi slices.
- Finish and serve: Drizzle generously with the hot honey mixture and garnish with crushed red pepper flakes and fresh thyme or microgreens if using. Serve immediately for best texture and flavor.
