Ricotta Filling

  • 1/4 cup chopped pistachios
  • Additional honey for drizzling

Instructions

  1. Prepare the Dates: Slice the Medjool dates lengthwise and carefully remove the pits, creating a cavity for the filling.
  2. Soften Dates if Necessary: If the dates feel stiff or difficult to work with, warm them in the microwave for 10-15 seconds to soften.
  3. Make the Ricotta Filling: In a small bowl, combine the ricotta cheese with 2 tablespoons of honey. Add ground cinnamon and vanilla extract if using, then mix thoroughly until the mixture is smooth and creamy.
  4. Stuff the Dates: Using a small spoon or piping bag, fill each date cavity generously with the ricotta mixture, making sure not to overfill and cause spilling.
  5. Top with Pistachios: Sprinkle chopped pistachios over each stuffed date, gently pressing them into the ricotta filling so they stick well.
