Ingredients

Cupcake Batter:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1/3 cup honey
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup fresh peaches (peeled and finely chopped)

Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups powdered sugar


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  2. Prepare dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Make batter: In a large bowl, beat the butter, honey, and sugar until light and creamy. Add eggs one at a time, then vanilla. Alternate adding flour mixture and buttermilk to the batter, ending with dry ingredients. Fold in chopped peaches.
  4. Bake: Divide batter among cupcake liners and bake for 18–22 minutes. Cool on a wire rack.
  5. Make frosting: Beat cream cheese and butter until smooth. Add honey and vanilla, then mix in powdered sugar until fluffy.
