Ingredients
Cupcake Batter:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (softened)
- 1/3 cup honey
- 1/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup fresh peaches (peeled and finely chopped)
Cream Cheese Frosting:
- 8 oz cream cheese (softened)
- 1/4 cup unsalted butter (softened)
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- 1 1/4 cups powdered sugar
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
- Prepare dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Make batter: In a large bowl, beat the butter, honey, and sugar until light and creamy. Add eggs one at a time, then vanilla. Alternate adding flour mixture and buttermilk to the batter, ending with dry ingredients. Fold in chopped peaches.
- Bake: Divide batter among cupcake liners and bake for 18–22 minutes. Cool on a wire rack.
- Make frosting: Beat cream cheese and butter until smooth. Add honey and vanilla, then mix in powdered sugar until fluffy.
- Frost cupcakes: Once cool, frost cupcakes and garnish with peach slices or honey.
