Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 2 limes (zest and juice)
- 3 tbsp honey
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 3 cups cooked white or brown rice
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup finely chopped red onion
- 1/4 cup chopped cilantro
- Optional: 1 jalapeño, finely chopped or a pinch of chili flakes
Instructions
- Whisk lime juice and zest, honey, garlic, olive oil, salt, and pepper in a bowl. Add chicken and marinate for at least 30 minutes or overnight.
- Grill or sauté chicken for 5–7 minutes per side until golden and cooked through. Let rest before slicing.
- Combine diced avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and optional jalapeño in a bowl. Toss gently to mix.
- Place a scoop of warm rice on a plate. Top with sliced chicken and spoon avocado salsa over the top.
- Drizzle with reserved marinade (if safe) or additional lime juice. Garnish with extra cilantro and chili flakes if desired.
