Description

A vibrant and satisfying stack of marinated honey-lime chicken, fluffy rice, and creamy avocado salsa. This colorful dish is as stunning as it is delicious, combining sweet, tangy, and fresh flavors in every bite.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 limes (zest and juice)
  • 3 tbsp honey
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 3 cups cooked white or brown rice
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped cilantro
  • Optional: 1 jalapeño, finely chopped or a pinch of chili flakes


Instructions

  1. Whisk lime juice and zest, honey, garlic, olive oil, salt, and pepper in a bowl. Add chicken and marinate for at least 30 minutes or overnight.
  2. Grill or sauté chicken for 5–7 minutes per side until golden and cooked through. Let rest before slicing.
  3. Combine diced avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and optional jalapeño in a bowl. Toss gently to mix.
  4. Place a scoop of warm rice on a plate. Top with sliced chicken and spoon avocado salsa over the top.
  5. Drizzle with reserved marinade (if safe) or additional lime juice. Garnish with extra cilantro and chili flakes if desired.
