Description

  • 1 red bell pepper, sliced

  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat grill to medium-high heat or oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, salt, pepper, paprika, and red pepper flakes.
  3. Place each chicken breast on a large sheet of aluminum foil.
  4. Divide the vegetables evenly among the foil packets around the chicken.
  5. Drizzle the honey-lime mixture evenly over the chicken and vegetables.
  6. Fold the sides of the foil over the chicken and vegetables, sealing the packets closed.
  7. Place packets on the grill or in the oven and cook for 20-25 minutes, or until the chicken is cooked through and vegetables are tender.
  8. Carefully open the packets (watch for steam), garnish with fresh cilantro, and serve.

  • Use chicken thighs instead of breasts for a juicier option.
