- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 2 cloves garlic, minced

- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat grill to medium-high heat or oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, salt, pepper, paprika, and red pepper flakes.
- Place each chicken breast on a large sheet of aluminum foil.
- Divide the vegetables evenly among the foil packets around the chicken.
- Drizzle the honey-lime mixture evenly over the chicken and vegetables.
- Fold the sides of the foil over the chicken and vegetables, sealing the packets closed.
- Place packets on the grill or in the oven and cook for 20-25 minutes, or until the chicken is cooked through and vegetables are tender.
- Carefully open the packets (watch for steam), garnish with fresh cilantro, and serve.

- Use chicken thighs instead of breasts for a juicier option.
