Ingredients
Chicken Thighs:
- 2 pounds boneless, skinless chicken thighs
Sauce:
- 1/2 cup honey
- 1/2 cup low-sodium soy sauce
- 1/4 cup ketchup
- 2 tablespoons hoisin sauce (optional for extra depth)
- 1 tablespoon rice vinegar
- 4 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/4 teaspoon crushed red pepper flakes (optional)
Thickening:
- 1 tablespoon cornstarch
- 2 tablespoons water
Garnish:
- Chopped green onions and sesame seeds
Instructions
- Prepare Chicken: Place chicken thighs in the slow cooker.
- Create Sauce: In a bowl, mix honey, soy sauce, ketchup, hoisin sauce, rice vinegar, garlic, ginger, and red pepper flakes. Pour over chicken.
- Cook: Cook on low for 5-6 hours or high for 2.5-3 hours until chicken is tender.
- Thicken Sauce: Remove chicken. Mix cornstarch with water and stir into the sauce. Cook on high, uncovered, for 15-20 minutes.
- Finish Dish: Return chicken to the sauce. Garnish with green onions and sesame seeds.

- Serve over rice or noodles with vegetables.
- Bone-in thighs may be used with extended cooking time.
