Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Sweet Potatoes

  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Green Beans

  • 2 cups fresh green beans, trimmed

Honey Garlic Sauce

  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1/2 tsp paprika
  • Salt and pepper to taste


Instructions

  1. Preheat the oven. Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
  2. Make the honey garlic sauce. In a small bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, paprika, salt, and pepper until smooth and well combined. This will serve as the flavorful glaze for the chicken and vegetables.
  3. Prepare the chicken. Arrange the chicken breasts on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Pour half of the honey garlic sauce over the chicken breasts, ensuring they are well coated. Set aside to marinate slightly.
  4. Prepare the sweet potatoes. In a separate bowl, toss the diced sweet potatoes with the remaining tablespoon of olive oil, salt, and pepper until evenly coated. Spread the sweet potatoes in a single layer around the chicken on the baking sheet.
  5. Roast chicken and sweet potatoes. Place the baking sheet in the preheated oven and roast for 20 minutes. Halfway through cooking, stir the sweet potatoes gently to promote even roasting. The chicken should be cooked through and sweet potatoes tender at this point.
  6. Cook the green beans. While the chicken and sweet potatoes roast, steam or blanch the green beans in boiling water for 3-4 minutes until tender-crisp. Drain well and set aside.
  7. Add green beans and sauce. Remove the baking sheet from the oven. Arrange the green beans around the chicken and sweet potatoes. Drizzle the remaining honey garlic sauce over the green beans and gently toss to coat all ingredients evenly.
  8. Finish roasting. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the green beans are tender and glazed.
