Description

Sweet and savory Honey Garlic Butter Roasted Carrots are a deliciously simple side dish featuring tender roasted carrots glazed with a buttery honey and garlic sauce, perfect for adding a flavorful and colorful touch to any meal.

Ingredients

Carrots

  • 2 lbs carrots, peeled and trimmed (whole or halved lengthwise)

Glaze

  • 3 tablespoons unsalted butter (or dairy-free alternative)
  • 2 tablespoons honey
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste

Optional Garnish

  • Fresh parsley or thyme

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and for easier cleanup.
  2. Prepare the Carrots: Peel the carrots and slice them in half lengthwise if they are thick. Pat them dry thoroughly to ensure better roasting and caramelization.
  3. Make the Glaze: In a small saucepan or microwave-safe bowl, melt the butter. Stir in honey and minced garlic, then add a pinch of salt and black pepper to enhance the flavors.
  4. Toss to Coat: Arrange the carrots evenly on the prepared baking sheet. Drizzle half of the honey garlic butter glaze over them and toss gently to coat the carrots evenly.
  5. Roast the Carrots: Place the baking sheet in the oven and roast the carrots for 20–25 minutes, flipping them halfway through the cooking time. Roast until they are fork-tender and have a light caramelized color.
  6. Glaze and Serve: Once roasted, drizzle the remaining glaze over the carrots. Toss gently to coat and garnish with fresh parsley or thyme if desired. Serve warm as a delicious side dish.

Notes

  • For best flavor, use fresh and firm carrots.
  • Adjust honey quantity to taste for more or less sweetness.
  • Butter can be substituted with vegan butter for a dairy-free option.
  • Make sure to pat the carrots dry to get a nice caramelization in the oven.
  • Flipping carrots halfway through roasting ensures even cooking and browning.
  • Optional garnish adds freshness and visual appeal.
