Description

Ingredients

Chicken

  • 4 large boneless skinless chicken breasts, about 6 ounces each
  • Pinch of salt and pepper

Glaze

  • 3 tbsp butter
  • 6 cloves garlic, minced
  • 1/3 cup honey
  • 2 tbsp whole grain Dijon mustard
  • Pinch of salt and pepper


Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) and allow it to preheat fully to ensure even cooking.
  2. Prepare the baking pan: Line an 8×8 inch baking pan with aluminum foil, making sure to leave enough space around each chicken breast. Place the lined pan in the oven to heat up while you prepare the glaze.
  3. Make the glaze: In a small sauté pan over medium heat, melt the butter. Add the minced garlic and cook for 30 to 60 seconds until softened but not browned. Stir in the honey, whole grain Dijon mustard, salt, and pepper. Allow the mixture to simmer for 1 to 2 minutes until it begins to reduce and thicken slightly.
  4. Season the chicken: Lightly season both sides of the chicken breasts with salt and pepper.
  5. Arrange chicken and add glaze: Carefully remove the hot baking pan from the oven and evenly space the chicken breasts in the pan. Pour the hot glaze over the chicken evenly, coating each piece.
  6. Bake and baste: Return the pan to the oven and bake for 15 minutes. Remove the pan and baste the chicken with the glaze that has collected in the pan. Then continue baking for another 15 to 20 minutes, or until a meat thermometer inserted into the thickest part reads 170°F (77°C).
  7. Rest and serve: Remove the chicken from the oven and let it rest for 5 minutes to allow the juices to redistribute before serving.
