Ingredients

For the Chicken:

  • 1 ½ pounds boneless skinless chicken breasts or thighs (cut into 1½-inch pieces)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon chipotle peppers in adobo sauce (minced)
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, honey, chipotle peppers, lime juice, garlic powder, smoked paprika, salt, and pepper.
  2. Marinate the Chicken: Add chicken pieces to the marinade, toss to coat well. Cover and marinate in the refrigerator for at least 30 minutes (up to 4 hours).
  3. Prep the Skewers: If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  4. Grill the Chicken: Preheat grill to medium-high heat. Thread marinated chicken pieces onto skewers. Grill for 10–12 minutes, turning occasionally, until chicken is cooked through and has nice grill marks.
