Description

These Honey Chipotle Chicken Rice Bowls are a perfect combination of sweet, spicy, and savory flavors. Tender marinated chicken served with rice, corn, black beans, avocado, and a zesty lime garnish, this dish is a delicious and satisfying meal.


Ingredients

Marinated Chicken:

  • 1 pound boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons adobo sauce (from a can of chipotle peppers)
  • 12 chipotle peppers (minced)
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Assembly:

  • 2 cups cooked rice (white, brown, or cilantro lime)
  • 1 cup corn (fresh, canned, or frozen and thawed)
  • 1 cup black beans (drained and rinsed)
  • 1 avocado (diced)
  • 1/4 cup chopped red onion
  • Chopped fresh cilantro and lime wedges for garnish

Instructions

  1. Marinate the Chicken: In a medium bowl, whisk together olive oil, honey, adobo sauce, minced chipotle peppers, lime juice, garlic powder, paprika, salt, and pepper. Add chicken and toss to coat. Let marinate for at least 15 minutes (or up to 8 hours).
