Description

This Honey Chipotle Chicken recipe is a perfect blend of sweet and spicy flavors, with tender chicken thighs marinated in a smoky chipotle mixture and grilled to perfection. Serve it with your favorite sides for a delicious and satisfying meal.


Ingredients

Marinade:

  • 1/4 cup honey
  • 2 chipotle peppers in adobo sauce (minced)
  • 2 tablespoons adobo sauce from the can
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lime juice
  • 3 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Chicken:

  • 1 1/2 pounds boneless skinless chicken thighs or breasts

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together honey, minced chipotle peppers, adobo sauce, olive oil, apple cider vinegar, lime juice, garlic, cumin, paprika, salt, and pepper.
  2. Marinate the Chicken: Place the chicken in a large zip-top bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 1 hour, preferably 4 hours or overnight for deeper flavor.
  3. Cook the Chicken: Preheat grill or skillet over medium-high heat. Remove chicken from the marinade and cook for 5–6 minutes per side, or until the internal temperature reaches 165°F.
  4. Rest and Serve: Let the chicken rest for 5 minutes before slicing. Serve with rice, veggies, or in tacos, bowls, or salads.

Notes

  • Adjust the number of chipotle peppers for more or less heat.
  • This recipe also works well with chicken wings or drumsticks.
