Ingredients
Marinade:
- 1/4 cup honey
- 2 chipotle peppers in adobo sauce (minced)
- 2 tablespoons adobo sauce from the can
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon lime juice
- 3 cloves garlic (minced)
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Chicken:
- 1 1/2 pounds boneless skinless chicken thighs or breasts
Instructions
- Prepare the Marinade: In a medium bowl, whisk together honey, minced chipotle peppers, adobo sauce, olive oil, apple cider vinegar, lime juice, garlic, cumin, paprika, salt, and pepper.
- Marinate the Chicken: Place the chicken in a large zip-top bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 1 hour, preferably 4 hours or overnight for deeper flavor.
- Cook the Chicken: Preheat grill or skillet over medium-high heat. Remove chicken from the marinade and cook for 5–6 minutes per side, or until the internal temperature reaches 165°F.
- Rest and Serve: Let the chicken rest for 5 minutes before slicing. Serve with rice, veggies, or in tacos, bowls, or salads.
Notes
- Adjust the number of chipotle peppers for more or less heat.
