Description

Honey BBQ Chicken Rice combines juicy chicken coated in a sticky, smoky-sweet BBQ sauce served over fluffy rice, making for a flavorful and comforting dish.


Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 2 cups cooked white or brown rice
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Green onions or chives (optional)
  • Sesame seeds (optional)


Instructions

  1. Pat the chicken dry and season both sides generously with salt, black pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook undisturbed for 3–4 minutes per side until a caramelized crust forms. Remove chicken from the skillet.
  3. In the same skillet, reduce the heat and add minced garlic. Sauté for 1 minute, then stir in BBQ sauce and honey. Let the sauce bubble until thickened and glossy.
  4. Return the chicken to the pan and turn until fully coated in the honey BBQ sauce. Simmer for an additional 2–3 minutes until the chicken is cooked through and sticky.
  5. Spoon rice into bowls and top with slices of honey BBQ chicken. Pour remaining sauce over the rice and garnish with green onions or sesame seeds, if desired.

Notes

  • Garnish with fresh green onions, chives, or sesame seeds for added texture and color.
  • For a lighter side, serve with steamed broccoli, cucumber salad, or sweet corn on the cob.
  • Grilled chicken can also be used for a smoky flavor. Brush the chicken with honey BBQ sauce while grilling.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months.
  • Reheat leftovers gently with a splash of water or broth to maintain juiciness.
  • To adjust spice level, add chili flakes or hot sauce to the honey BBQ sauce for more heat.
  • If you prefer less sweetness, reduce the honey or use a tangier BBQ sauce with more vinegar.
