Ingredients

Carrots:

  • 1 ½ pounds carrots (peeled and cut into sticks or left whole if thin)

Glaze:

  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • optional chopped parsley for garnish


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the glaze: In a large bowl, whisk together the olive oil, balsamic vinegar, honey, salt, pepper, and thyme.
  3. Coat the carrots: Add the carrots to the bowl and toss to coat evenly.
