Ingredients
Carrots:
- 1 ½ pounds carrots (peeled and cut into sticks or left whole if thin)
Glaze:
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
- optional chopped parsley for garnish
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the glaze: In a large bowl, whisk together the olive oil, balsamic vinegar, honey, salt, pepper, and thyme.
- Coat the carrots: Add the carrots to the bowl and toss to coat evenly.
- Roast: Spread the carrots on the baking sheet and roast for 25–30 minutes, turning once halfway through.
