Ingredients

Italian Sausage:

1 lb

Bacon:

4 slices, thick-cut, chopped

Onion:

1 medium, diced

Garlic:

3 cloves, minced

Chicken Broth:

6 cups

Russet Potatoes:

3 large, thinly sliced

Kale:

2 cups, chopped

Heavy Cream:

1 cup

Red Pepper Flakes:

½ teaspoon (optional)

Salt and Black Pepper:

Instructions

  1. Cook Italian Sausage: In a large soup pot, brown Italian sausage over medium heat, breaking it into crumbles. Remove and set aside.
  2. Cook Bacon: In the same pot, cook chopped bacon until crispy.
  3. Add Onions and Garlic: Sauté diced onion until translucent, then add minced garlic and cook for 1–2 minutes.
  4. Add Broth and Potatoes: Pour in chicken broth, bring to a boil, add sliced potatoes, and simmer for 15–20 minutes until tender.
  5. Combine Ingredients: Return sausage to pot, add kale, and simmer for 5 minutes. Stir in heavy cream and red pepper flakes if using.

  • For a dairy-free version, use full-fat coconut milk instead of heavy cream.
