Ingredients
- 2 cups granulated sugar
- 1 whole vanilla bean
Instructions
- Split the vanilla bean lengthwise with a sharp paring knife and scrape out the seeds using the back of the knife.
- Add the seeds and scraped pod to the granulated sugar in a bowl.
- Use your fingers to rub the seeds into the sugar until well combined and aromatic.
- Transfer the vanilla sugar and pod to an airtight container.
- Let sit for at least 2 days (up to 2 weeks) for full infusion, shaking the container daily.
- Use as needed, topping off with more sugar as it depletes. Add a second vanilla bean for stronger flavor if desired.
Notes
- Use superfine or coconut sugar as a substitute for a different flavor profile.
- Reuse the vanilla bean as long as it’s dry and aromatic.
