Description

This Homemade Reuben Bake is a delightful and easy-to-make casserole that brings the classic flavors of a Reuben sandwich into a warm, comforting dish. Featuring layers of corned beef, sauerkraut, Swiss cheese, and tangy Thousand Island dressing enveloped in buttery crescent roll dough, it’s perfect for a savory main course that the whole family will love.

Ingredients

Dough Layer

  • 1 (8 oz) tube refrigerated crescent roll dough

Filling

  • 1/2 pound sliced corned beef
  • 1 cup sauerkraut (drained and patted dry)
  • 1 cup shredded Swiss cheese
  • 1/4 cup Thousand Island dressing
  • 1 teaspoon caraway seeds (optional)

Topping

  • 1 egg beaten (for brushing crust)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish or line with parchment paper to prevent sticking.
  2. Prepare Base Layer: Unroll the crescent roll dough and press half of it into the bottom of the baking dish, making sure to seal the seams together to create a solid base for the bake.
  3. Layer Filling: Evenly layer the sliced corned beef over the dough, followed by the drained sauerkraut to avoid sogginess, then sprinkle the shredded Swiss cheese on top.
  4. Add Dressing and Seasoning: Drizzle the Thousand Island dressing evenly over the cheese layer, and sprinkle caraway seeds if using to enhance the traditional Reuben flavor.
  5. Top with Dough: Cover the filling with the remaining crescent roll dough, carefully pressing the edges together to seal and prevent the filling from leaking out during baking.
  6. Brush Crust: Lightly brush the top of the dough with the beaten egg to achieve a shiny, golden-brown crust once baked.
  7. Bake: Bake the dish in the preheated oven for 20–25 minutes or until the top crust turns golden brown and the filling is heated through.
  8. Cool and Serve: Allow the Reuben Bake to cool slightly before slicing into squares. Serve warm, optionally with extra Thousand Island dressing or dill pickles on the side.

Notes

  • For a crisper bottom crust, prebake the bottom layer of dough for 5 minutes before adding the filling.
  • You can substitute rye bread dough instead of crescent roll dough for a more authentic Reuben flavor.
  • Serve with extra Thousand Island dressing or dill pickles to complement the savory flavors.
