Ingredients

Cookies:

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter (softened)
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Filling:

  • ½ cup creamy peanut butter
  • 2 tablespoons unsalted butter (softened)
  • 1 cup powdered sugar
  • 12 tablespoons milk (as needed for consistency)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream ingredients: In a large bowl, cream together peanut butter, butter, brown sugar, and granulated sugar until smooth. Beat in the egg and vanilla extract.
  3. Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add dry ingredients to the wet mixture and mix until combined.
