Ingredients
Cookies:
- 1 cup creamy peanut butter
- ½ cup unsalted butter (softened)
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ¼ cups all-purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
Filling:
- ½ cup creamy peanut butter
- 2 tablespoons unsalted butter (softened)
- 1 cup powdered sugar
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream ingredients: In a large bowl, cream together peanut butter, butter, brown sugar, and granulated sugar until smooth. Beat in the egg and vanilla extract.
- Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add dry ingredients to the wet mixture and mix until combined.
- Form dough: Roll dough into small balls and place them on baking sheets. Press with a fork to create a pattern.
- Bake: Bake for 9–11 minutes until golden. Cool on pan before transferring to a wire rack.
- Prepare filling: Beat peanut butter, butter, and powdered sugar. Add milk as needed for consistency.
- Assembly: Spread or pipe filling onto one cookie and sandwich with another.

- For authentic texture, use unsweetened peanut butter.
