Ingredients
Dough
- 3 tablespoons milk
- 3 tablespoons boiling water
- 1 teaspoon dry active yeast
- 8 ounces all-purpose flour (about 1¾ cups)
- 1½ ounces sugar (about 3 tablespoons)
- 1 egg
- 1 ounce butter (softened)
- A dash of salt
- Oil for frying
Glaze
- 1/3 cup butter
- 2 cups confectioners’ sugar
- 1½ teaspoons vanilla extract
- 4 tablespoons hot water (adjust as needed)
Instructions
- Activate yeast: Combine milk and boiling water in a small bowl, then let cool to lukewarm. Stir in yeast and a pinch of sugar. Allow the mixture to sit until foamy, approximately 5–10 minutes.
- Mix dry ingredients and cut in butter: In a large bowl, combine flour, sugar, and salt. Cut softened butter into the mixture until it resembles crumbs.
- Add wet ingredients and form dough: Beat the egg and add it along with the yeast mixture into the flour mixture. Stir until a sticky dough forms.
- Knead dough: Turn dough onto a floured surface and knead for 5–10 minutes until smooth and elastic.
- Let dough rise: Place dough into a greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
- Shape doughnuts: Punch down the dough, divide into four parts, roll each piece into a rope, cut into inch-long segments, and shape each segment into a ball.
- Rest shaped dough: Arrange dough balls on a tray, cover, and let rest for 10–15 minutes before frying.
- Fry doughnuts: Heat oil in a deep fryer or heavy pot to 375°F (190°C). Fry doughnuts in batches for about 2 minutes per side or until golden brown. Remove and drain on paper towels.
- Prepare glaze: Melt butter in a bowl, then stir in confectioners’ sugar and vanilla. Gradually add hot water, stirring until smooth and pourable.
- Glaze doughnuts: While warm, dip each doughnut in the glaze. Place on a wire rack to allow glazing to set.
Notes
- Ensure the yeast mixture is foamy to guarantee proper dough rise.
- Use a thermometer to monitor frying oil temperature to avoid greasy doughnuts.
- Adjust hot water in glaze to achieve desired glaze consistency.
- Allow doughnuts to cool slightly before glazing to prevent melting glaze completely.
- Store leftover doughnuts in an airtight container for up to 2 days.
