Ingredients

Marinade:

  • 8 bone-in, skin-on chicken pieces (such as drumsticks and thighs)
  • 2 cups buttermilk
  • 1 tablespoon hot sauce (optional)

Seasoned Flour:

  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon celery salt
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon white pepper
  • ½ teaspoon baking powder
  • cooking spray or oil for baking


Instructions

  1. Marinate the Chicken: In a large bowl, mix buttermilk and hot sauce. Add chicken pieces, coat well, cover, and refrigerate for at least 4 hours or overnight.
  2. Preheat the Oven: to 425°F. Place a wire rack over a baking sheet and spray with nonstick cooking spray.
  3. Prepare the Flour Mixture: In a large bowl, combine flour, paprika, garlic powder, onion powder, thyme, oregano, celery salt, salt, black pepper, white pepper, and baking powder.
  4. Dredge the Chicken: Remove chicken from marinade, dredge in seasoned flour, and press to coat. Repeat for extra crunch.
  5. Bake the Chicken: Arrange on wire rack, spray with cooking spray, bake for 40–45 minutes, flipping halfway through until golden and cooked through.
