Ingredients
Vegetables
- 2 pounds fresh green beans, trimmed
Sauce
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup milk
- 1 teaspoon soy sauce
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Toppings
- 1 cup grated cheddar cheese (divided)
- 1 ½ cups crispy fried onions
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Blanch Green Beans: Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for about 5 minutes until they turn bright green and are tender-crisp. Drain the green beans and immediately transfer them to an ice bath to stop the cooking process and preserve their vibrant color.
- Prepare Sauce Mixture: In a large bowl, mix together the condensed cream of mushroom soup, milk, soy sauce, garlic powder, salt, and pepper. Stir well until the ingredients are fully combined.
- Combine Beans and Sauce: Fold the blanched green beans into the soup mixture, tossing gently to ensure all the beans are evenly coated with the creamy sauce.
- Add Cheese: Mix in half of the grated cheddar cheese into the green bean mixture, reserving the remaining half for topping.
- Assemble Casserole: Grease a 9×13-inch baking dish and pour the green bean and sauce mixture into it, spreading evenly.
- Add Toppings: Sprinkle the reserved cheddar cheese evenly over the casserole, then top with 1 cup of crispy fried onions, reserving the remaining ½ cup for garnish after baking if desired.
- Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes until the casserole is bubbly and the topping is golden brown.
- Cool: Remove the casserole from the oven and let it rest for 5-10 minutes to set before serving.
- Serve: Serve warm and enjoy your delicious homemade green bean casserole, a perfect side for any occasion.
Notes
- Blanching the green beans helps to preserve their color and texture in the casserole.
- For a vegetarian version, ensure the condensed soup is vegetarian-friendly or substitute with a homemade mushroom sauce.
- To add extra crunch, reserve some crispy fried onions to sprinkle on top right before serving.
- You can prepare this casserole a day in advance and refrigerate before baking; just add extra baking time if coming straight from the fridge.
- Feel free to swap cheddar cheese with mozzarella or Swiss for a different flavor profile.
