  3. Cook the mixture: Stir constantly until sugar dissolves and the mixture comes to a boil. Attach a candy thermometer and continue cooking without stirring until the temperature reaches 245°F, indicating the firm ball stage.
  4. Add butter and vanilla: Remove the pan from heat carefully, then stir in the unsalted butter pieces and vanilla extract until the mixture becomes smooth and glossy.
  5. Set the caramel: Pour the hot caramel mixture into the prepared pan and allow it to cool at room temperature for several hours until completely set and firm.
  6. Cut and finish: Once set, use the parchment overhang to lift the caramel from the pan. Cut into approximately 64 small squares and, if desired, sprinkle with flaky sea salt for a sophisticated touch.
