Ingredients
- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded cheddar or mozzarella cheese
- 1/4 cup diced bell peppers
- 1/4 cup chopped spinach
- 1/4 cup cooked turkey bacon or ham (optional)
- Salt and black pepper to taste
- Non-stick spray or oil for greasing
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin with non-stick spray or oil.
- In a large bowl, whisk together eggs and cottage cheese until smooth and slightly bubbly.
- Stir in shredded cheese, bell peppers, spinach, and turkey bacon or ham if using.
- Season with salt and pepper, then pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
- Bake for 18–22 minutes, until set and lightly golden on top. Let cool for a few minutes before removing from the tin.
