Description

These High Protein Egg Bites are fluffy, flavorful, and endlessly customizable—perfect for meal prep, post-workout snacks, or busy mornings on the go.


Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/4 cup cooked turkey bacon or ham (optional)
  • Salt and black pepper to taste
  • Non-stick spray or oil for greasing


Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin with non-stick spray or oil.
  2. In a large bowl, whisk together eggs and cottage cheese until smooth and slightly bubbly.
  3. Stir in shredded cheese, bell peppers, spinach, and turkey bacon or ham if using.
  4. Season with salt and pepper, then pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 18–22 minutes, until set and lightly golden on top. Let cool for a few minutes before removing from the tin.
