Description

Ingredients

For the Fried Rice:

  • 2 cups cooked jasmine or long-grain rice (preferably day-old)
  • 1 tablespoon sesame oil
  • 2 tablespoons butter

For the Chicken:

  • 2 boneless, skinless chicken breasts (diced)
  • Salt and pepper to taste

Additional Ingredients:

  • 2 eggs (lightly beaten)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 green onions (chopped)
  • 2–3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon garlic (minced)
  • 1 teaspoon ginger (minced)


Instructions

  1. Cook the Chicken: Heat sesame oil and 1 tablespoon of butter in a large skillet or wok. Cook diced chicken with salt and pepper until golden brown and cooked through. Set aside.
  2. Prepare the Vegetables: Add the remaining butter to the skillet. Sauté garlic, ginger, and mixed vegetables until tender.
  3. Scramble Eggs: Push vegetables aside, pour in beaten eggs, scramble until cooked, then mix everything together.
  4. Combine Ingredients: Add rice, cooked chicken, soy sauce, and oyster sauce. Cook until heated through. Stir in green onions before serving.
