Pommes Persillade is a classic French potato dish featuring crispy, golden-brown cubes of potatoes tossed with fragrant garlic, fresh parsley, and seasonings. This side dish is a delightful combination of crunchy exteriors and fluffy interiors, enhanced by the vibrant flavors of garlic and herbs.
Ingredients
Potatoes:
- 2 pounds Yukon Gold or Russet potatoes, peeled and cut into ½-inch cubes
Seasonings:
- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 garlic cloves, minced
- ¼ cup fresh parsley, finely chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Prepare Potatoes: Place cubed potatoes in a large pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook for 5–6 minutes until slightly tender. Drain and pat dry.
- Crisp Potatoes: Heat olive oil in a skillet, add potatoes in a single layer, cook until golden on one side. Stir and continue cooking until crispy.
- Add Flavor: Reduce heat, add butter and garlic, cook briefly. Toss in parsley, salt, and pepper.
- Serve: Remove from heat and serve hot and crispy.
