Description

Pommes Persillade is a classic French potato dish featuring crispy, golden-brown cubes of potatoes tossed with fragrant garlic, fresh parsley, and seasonings. This side dish is a delightful combination of crunchy exteriors and fluffy interiors, enhanced by the vibrant flavors of garlic and herbs.


Ingredients

Potatoes:

  • 2 pounds Yukon Gold or Russet potatoes, peeled and cut into ½-inch cubes

Seasonings:

  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • ¼ cup fresh parsley, finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. Prepare Potatoes: Place cubed potatoes in a large pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook for 5–6 minutes until slightly tender. Drain and pat dry.
  2. Crisp Potatoes: Heat olive oil in a skillet, add potatoes in a single layer, cook until golden on one side. Stir and continue cooking until crispy.
  3. Add Flavor: Reduce heat, add butter and garlic, cook briefly. Toss in parsley, salt, and pepper.
  4. Serve: Remove from heat and serve hot and crispy.

Notes

  • Pommes persillade pairs well with steak, roast chicken, or eggs.
  • For added flavor, consider a touch of lemon zest or white wine vinegar.
