A simple and flavorful Herb-Crusted Tilapia baked alongside a medley of roasted vegetables, perfect for a healthy and balanced weeknight dinner. The tilapia is coated with a crunchy herb breadcrumb crust, and the vibrant vegetables are caramelized for a delicious finish.
Ingredients
For the Tilapia:
- 4 tilapia fillets
- 1 tablespoon olive oil
- 1/2 cup breadcrumbs (preferably panko)
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon garlic powder
- 1 teaspoon lemon zest
- Salt and pepper to taste
For the Vegetables:
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven: Set your oven to 425°F (220°C) to prepare for baking the tilapia and roasting the vegetables.
- Prepare breadcrumb mixture: In a small bowl, combine the breadcrumbs, chopped parsley, chopped thyme, garlic powder, lemon zest, salt, and pepper to create the flavorful crust topping for the fish.
- Coat the tilapia: Brush each tilapia fillet evenly with 1 tablespoon olive oil, then press the breadcrumb mixture firmly onto the top side of each fillet to create a herb crust.
- Prepare the vegetables: On a baking sheet, arrange the broccoli florets, sliced red bell pepper, sliced zucchini, and red onion wedges. Drizzle with the remaining 1 tablespoon olive oil, season with salt and pepper, then toss to coat the vegetables evenly.
- Arrange for baking: Push the vegetables to the edges of the baking sheet to create space in the center. Place the crusted tilapia fillets in the center of the sheet.
- Bake: Place the baking sheet in the preheated oven and bake for 15 to 18 minutes, or until the tilapia flakes easily with a fork and the vegetables are tender and slightly caramelized.
- Serve: Remove from the oven and serve the herb-crusted tilapia hot alongside the roasted vegetables immediately.
