Ingredients

Potatoes

  • 5 pounds Yukon Gold or white potatoes, peeled and cubed

Seasoning and Broth

  • 1/3 cup chicken broth
  • Salt, to taste

  • Ground black pepper, to taste

Garlic Herb Butter

  • 1/2 cup unsalted butter
  • 7-9 garlic cloves, minced
  • 1/3 cup chopped fresh dill
  • 1/3 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives


Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Prepare Potatoes: Peel and cube the Yukon Gold or white potatoes. Place them in a large bowl and cover with cold water to rinse. Drain the water and rinse the potatoes again to remove excess starch.
  3. Season Potatoes: Arrange the cubed potatoes evenly on the prepared baking sheet. Pour the chicken broth over the potatoes and sprinkle salt and ground black pepper to taste, ensuring the potatoes are well seasoned.
  4. Bake Potatoes: Cover the baking sheet tightly with aluminum foil to keep moisture in. Bake for 35-40 minutes or until the potatoes are tender when pierced with a fork.
  5. Make Garlic Herb Butter: While the potatoes bake, melt unsalted butter in a saucepan over medium heat. Add the minced garlic and cook gently until fragrant, being careful not to brown the garlic. Stir in the chopped dill, parsley, and chives to infuse the butter with fresh herb flavors.
