Description

Ingredients

Graham Cracker Crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 3 tablespoons sugar

Cheesecake Filling:

  • 16 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 cup sour cream

Topping:

  • 1 can (21 ounces) cherry pie filling
  • ½ cup shelled pistachios, roughly chopped

Instructions

  1. Preheat Oven: Preheat oven to 325°F (160°C) and line a 9×13-inch baking dish with parchment paper.
  2. Prepare Crust: Mix graham cracker crumbs, melted butter, and sugar. Press into the pan.
  3. Make Filling: Beat cream cheese and sugar, add eggs one at a time, then mix in vanilla, almond extract, and sour cream. Pour over crust.
  4. Bake: Bake for 35-40 minutes until center is set. Cool, then refrigerate for at least 3 hours.
  5. Add Topping: Spread cherry pie filling over the chilled cheesecake, sprinkle with chopped pistachios, slice, and serve.
