Ingredients
Graham Cracker Crust:
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 3 tablespoons sugar
Cheesecake Filling:
- 16 ounces cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- 1 cup sour cream
Topping:
- 1 can (21 ounces) cherry pie filling
- ½ cup shelled pistachios, roughly chopped
Instructions
- Preheat Oven: Preheat oven to 325°F (160°C) and line a 9×13-inch baking dish with parchment paper.
- Prepare Crust: Mix graham cracker crumbs, melted butter, and sugar. Press into the pan.
- Make Filling: Beat cream cheese and sugar, add eggs one at a time, then mix in vanilla, almond extract, and sour cream. Pour over crust.
- Bake: Bake for 35-40 minutes until center is set. Cool, then refrigerate for at least 3 hours.
- Add Topping: Spread cherry pie filling over the chilled cheesecake, sprinkle with chopped pistachios, slice, and serve.
